Asafoetida Powder. Asafoetida or Hing - is an important specialist spice used in traditional Indian cuisine that is purported to help with the digestion of pulses, so is great for those who eat a vegetarian diet. Asafoetida is an Indian flavouring, made by drying the sap of the ferula assafoetidaplant. It has a strong flavour and is used in Indian curries, chutneys and pickles.
Add a pinch of asafoetida to general curry-type meals and preserves, very early on in the cooking process in order to bring out the full flavour as the meal cooks. Also add it to meat marinades.
This is a mild powder, with the asafoetida powder mixed with flour and turmeric for a more well-rounded flavour.
